One day, I decided it was time to leave my comfort zone of the high-tech software business and pursue a 20-year dream to open a restaurant catering to the market trend of smaller plate upscale dining in a comfortable, social atmosphere with live acoustic entertainment. We’re a place where the customer comes first, “everybody knows your name”, quality is counted on, and a great experience is expected.
My brother-in-law Al Wilsey, our executive chef, came up from Tennessee and we proceeded with a rapid-pace 10-week construction build out from a dirt floor, a personally designed and constructed custom bar, and a lot of sweat equity in all of the details of our kitchen and décor.
The concepts of a small, interesting venue with live rotisserie cooking and a raw bar were quite challenging in constructing our kitchen, dining room, and bar. I knew from the beginning that we were going to have to start from a blank sheet of paper and throw out the standard practices for designing efficient restaurant floor plans. Cooking techniques have been invented for items on our rotisserie, and no expense was spared in creating a safe, clean kitchen to roll out our fresh offerings.
